Our Story

My love for a chocolate chip cookie runs deep.
But I'm particular…
To me, the perfect cookie should be thin, almost lacy, with a crispy edge and a soft center. I want to taste the caramel of the brown sugar, with not-so-subtle hints of salt, vanilla and butter. The dough should be the real star of the show- the chocolate chips are an added bonus, but totally optional.
There’s no shortage of premium cookies in New York, but the ultra thin cookies I love so much are few and far between.
I was never the baker of the family - that’s a title we reserved for my dad. Then I had a baby, lost my job, and seemingly lost my mind because…I started baking… a lot; testing and tweaking my recipe, the ingredients and even the pans I used (apparently it matters!). Batch after batch my cookies got closer and closer to being my version of perfect and I’d package them up and give them away to everyone and anyone who wanted them because how many cookies can you possibly have in the house at one time?
Then, in January 2024, my daughter’s teacher asked if she could purchase a dozen of the cookies I had dropped off the week before. And in that moment, Heathcote Bakery was born.
